Romanesco is also known as ‘tower cabbage’ because of its strikingly shaped florets. Its flavour is a bit milder than cauliflower. It’s tasty in both traditional Belgian stews and Mediterranean pasta dishes.
Romanesco is sensitive to ethylene gas. Do not place the vegetable next to ethylene-producing vegetables such as apples, pears, and tomatoes to prevent it from wilting faster.
Present the romanesco head facing upwards, with some of the leaves wrapped partially around it. This highlights the spiral-shaped florets and keeps the head protected.
Romanesco dries out and discolours quickly, so ensure proper ventilation while avoiding moisture loss and temperature fluctuations. Handle the pointed florets carefully, as this vegetable is more delicate than regular cauliflower.
