Orange cauliflower is a colourful variation of white cauliflower, with a slightly sweeter taste. Its vibrant colour comes from a natural mutation that allows the plant to produce more beta-carotene. It’s delicious in dishes like casseroles.
Orange cauliflower is sensitive to ethylene gas. To prevent the florets from turning yellow, don’t store it next to ethylene-producing fruits and vegetables like apples, pears, or tomatoes.
Display the cauliflowers with the head facing up and the leaves partly wrapped around it. This highlights the orange colour while keeping the head protected.
Use ventilated crates to prevent condensation during transport.
