Kohlrabi is a versatile, forgotten vegetable with a crunchy texture and a fresh, mildly spicy flavour that’s like a cross between a radish and a broccoli stem. This root vegetable is an excellent source of fibre, vitamin C, and potassium, making it perfect for salads or grilled dishes.
Display kohlrabi alongside other forgotten vegetables like parsnip, salsify, and turnips. Place the kohlrabi with the leaves facing upwards so both the bulb and the greens are clearly visible. Avoid crushing the leaves.
Kohlrabi is sensitive to ethylene gas. Don’t store it next to ethylene-producing fruits like apples, pears, and tomatoes to prevent rapid wilting.
Remove the leaves from the kohlrabi to extend the shelf life of the bulb.
