Purple cauliflower is a colourful variety of white cauliflower with a slightly sweeter taste than the white kind. Its colour comes from anthocyanins, the same antioxidants found in blueberries and red cabbage.
Purple cauliflower is sensitive to ethylene gas. Avoid placing it next to ethylene-producing vegetables like apples, pears, and tomatoes to prevent yellowing of the florets.
Present the cauliflowers with the head facing up and the leaves partly wrapped around, so the orange colour stands out and the head stays protected.
Use ventilated crates to prevent condensation during transport.
