The shallot is a subtle and aromatic variant of the onion, loved for its sweet and mild flavour and delicate fragrance. Shallots can be eaten both raw and cooked. Raw, they add a mild spiciness to salads and dressings, while when sautéed or caramelised they develop a sweet flavour.
Store shallots in a dry environment to prevent mould growth.
Shallots are sensitive to ethylene gas. Do not place them next to ethylene-producing vegetables such as apples, pears and tomatoes to avoid faster wilting.
